Bake part2

Banana Cupcakes

Ingredients
Makes 2 dozens

  • 300g Flour
  • 2tsp Baking powder
  • 2tsp Bicarbonate of soda
  • ½ tsp Salt
  • 200g Sugar
  • 220g Butter
  • 4 Eggs (medium size)
  • 400g Bananas (I used pisang emas) - mashed
  • 5tbsp Milk
  • 1tsp Vanilla essence
  • 1tsp Banana essence (optional)

Methods

  1. Sift flour, baking powder, bicarbonate of soda and salt into a mixing bowl.
  2. In a separate bowl, beat butter and sugar until creamy white. Add beaten eggs a little at a time. Mix well after each addition.
  3. Add in vanilla essence or banana essence, milk and mashed bananas.
  4. Fold in flour and mix well. Pour mixture into muffin cups (3/4 cup) and add a slice of banana on top before sending the tray into the oven and bake at 180?C for 25-30 minutes or until a skewer inserted into the centre of the cuppies comes out clean.

Tips: Turn your cupcakes tray after 15 minutes into baking to ensure eveness

Chocolate Brownie Cupcakes

Ingredients
(makes 12 cupcakes)

  • 125g Plain chocolate chips (I used cooking chocolate bar)
  • 125g Unsalted butter (I used salted butter)
  • 2 Eggs
  • 300g Castor sugar (I used 200g only)
  • 1tsp Vanilla essence
  • 115g Plain flour

Methods

  1. Melt chocolate and butter in a medium bowl over a pan of simmering water, stirring until melt. Set aside to cool.
  2. In another medium bowl, beat the eggs, sugar and vanilla until pale and thick using a whisk.
  3. Fold in the chocolate and the flour until well mixed. The batter should be gooey and sticky.
  4. Spoon batter into cases and bake @ 160 degree Celsius for about 25 minutes.
  5. Remove from oven and cool for 5 minutes before removing from tray and cool on rack.

You can make some cream topping if you want but it tastes good as it is! :)

Homemade Flower Shaped Bread Pizza

(Make 6)

  • 6 slices of Bread (White or Wholemeal)
  • 1 slice Chicken ham (cut into small squares)
  • 1/4 cup Mixed vegetables (corn, green peas & carrot)
  • Mayonnaise (to mix with ham and mixed vege)
  • 1 slice cheddar cheese (cut into small strips)
  • Tomato paste (for spreading on bread)

Methods

  1. Cut out the flower shaped bread using the cutter and spread a thin layer of tomato paste in the centre and squeeze into muffin pan cavities.
  2. Mix Mayonnaise and mixed vegetable and ham pieces and slowly scoop into each ‘flower bowl’ and topped with cheddar cheese strips.
  3. Bake in pre-heated oven for 10 minutes at 180 degree Celsius.

    Oreo Cookies Cupcakes with Mint Frosting

    Ingredients

    Make 12 Cupcakes

  4. 117 g Self-raising flour
  5. 50 g Oreo biscuits - chopped
  6. 115 g Butter (recommend to use unsalted but I used the salted one)
  7. 90 g Sugar
  8. 2 eggs
  9. 1/8 tsp Salt

Methods

  1. Beat butter, salt and sugar till slightly creamy with a mixer, add in eggs (one by one) then the flour and mix till combined.
  2. Stir in the chopped oreo biscuits and spoon into paper cups.
  3. Bake at 160-170C for 25 minutes (big cup) or until cooked.
  4. Remove from oven and cool on cooling rack.

Frosting

Ingredients

  • 120 g Butter
  • 1/8 tsp. salt
  • 120 g Icing sugar
  • 1 tsp Peppermint essence
  • A drop of green colouring

*Some draggies for decorations

Methods

  1. Cream butter, salt and sugar till smooth preferably with a mixer.
  2. Add in colouring and mint essence and pipe onto cupcakes.
  3. Decorate with some draggies or other preferred decoratives.

Blueberries Muffins with Cream Cheese

Ingredients

  • 1pkt Blueberries muffins mix
  • 130g Butter/margerine
  • 117ml Water
  • 3 Eggs (medium size)
  • 70g Cream Cheese (cut into rectangular cubes)

Methods

  1. Add in water to the pre-mix, stir and mixed well. Add in the eggs one by one till all eggs are well mixed to create a smooth batter.
  2. Scoop 1 spoonful of batter into regular muffin pan, stuff in the cream cheese cube before covering it with another spoonful of batter.
  3. Bake at 175 degree Celcius for about 20-25 minutes.
  4. Remove from oven and cool on rack.

Accidental - Cranberries Muffins

Ingredients

  • 300g (2 3/4 cups) Self Raising flour - sifted
  • 150g Castor sugar
  • 15g (2tbsp) Milk powder
  • 30g (5tbsp) Honey
  • 120g (1/2 cup) Butter/margerine
  • 50g Cranberries - chopped to smaller pieces
  • 165g (3/4 cup) Water
  • 3g (1/2 tsp) Vanilla Essence

Method

  1. Mix sugar, milk powder, margerine, flour and honey together till well mixed.
  2. Add in water and vanilla and mix till all blend in.
  3. Add in cranberries and put into muffin pan and bake for 20-25 mins at 180 degree celcius.
  4. Removed from oven and let it cool on rack

    Black Cupcakes (Chocolate)

    Ingredients

  5. 125g Butter
  6. 3/4 cup Sugar
  7. 2 Eggs
  8. 1 1/4 cup Flour
  9. 1 tsp Baking powder
  10. 2 tbsp Cocoa powder
  11. 1/4 cup Milk
  12. 100g Dark chocolate

Methods

  1. Mix butter and and sugar and beat until light and creamy (use a mixer)
  2. Gradually add the eggs and mix well
  3. Sift over the flour, baking powder and cocoa and beat until combined
  4. Fold through the milk, stir in the dark chocolate and spoon the mixture into medium muffin pan.
  5. Bake at 320F or 160C for 12-15 minutes.
