Sauces

Tempura Mushrooms with Sweet and Spicy Sauce

Here's the concoction of my dipping sauce:

  • 1/2 tablespoon Lime Juice
  • 1/2 tablespoon (Maggi) Chilli Sauce
  • 1 teaspoon Light Soy Sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Coriander Roots, chopped
  • 1/3 teaspoon Sesame Seed Oil

    Japanese Vinaigrette

    What is in the Salad Bowl ...
    • Shredded Japaneses Cabbage
    • Frisée
    • Tomato Slices
    • Japanese Cucumber Slices
    • Avocado Slices
    The Dressing:
    • 3 tablespoon Salad or Vegetable Oil
    • 2 tablespoon Vinegar or Apple Cider
    • 1 tablespoon Sesame Seed Oil
    • 1 tablespoon Light Soy Sauce
    • 1 teaspoon Lemon or Lime Juice
    • 1 teaspoon Sesame Seeds
    • A pinch of sugar
    • 1 tablespoon Grated Radish, to be added before serving
    Note:
    • Adjust the flavour accordingly to your taste. If you prefer less sour then add less vinegar.
    • You can make more dressing and keep it in the fridge.
    • Optional ingredients here are the sesame seeds and grated radish.

      Seared Prawn Salad with Orange Vinaigrette


      My husband has been working late lately so we celebrated a day ealier with home cooked dinner and on the actual day he had this and this.

      This dish was one of the four dishes, excluding soup, I prepared for my husband for the birthday dinner.

      Ingredients:

    • 6 medium Prawns, shelled and deveined
    • 2 Lettuce Leaves, or your preferred greens (I had rocket leaves too)
    • 6 Cherry Tomatoes, whole or sliced
    • 1/2 teaspoon Sesame Seed Oil or Olive Oil

    Marinade:

    • 1 teaspoon Light Soy Sauce
    • a dash of pepper

    Orange Vinaigrette:

    • 1/2 tablespoon Olive Oil
    • 2 tablespoon Orange Juice
    • 1/2 tablespoon Apple Cider
    • 2 teaspoon Lemon or Lime Juice
    • a pinch of salt and sugar each

    How to do it:

    1. Arrange lettuce in bowl and set aside.
    2. Marinate prawns briefly.
    3. Saute with sesame seed oil or olive oil if you preferred, till just cooked.
    4. Let the prawns cooled before putting in the bowl.
    5. Add tomatoes.
    6. Mix vinaigrette well and drizzle over salad.
    7. Serve.

    Note:

    • Do not refrigerate cooked prawns as it will turn hard.
    • You can prepare all the green and refrigerate it. Only cook the prawns when you are really to eat or serve.
    • You can add any other greens you like, eg, bell pepper, cucumber, celery.

      Sliced Pork with Plum Sauce

      Everytime we went shopping, I always request to go to the supermarket and before we went home. I love supermarket shopping!!. I bought a tray of thinly sliced pork and a bunch of Frisee (among many other stuff) during my last trip. I'm using both items here and this dish taste great even when it's cooled. Just nice for my husband who is always back home late past dinner time. Most importantly, it's really easy to make!

      Ingredients:

    • 9 pieces Pork, thinly sliced
    • 3 leaves of Frisee, cut into 3 each
    • 5 Pickled Plums, pitted and finely chopped
    • 1/2 tablespoon Sugar
    • 1/2 tablespoon Chinese Cooking Wine
    • 1/2 tablespoon Cornflour
    • 1 teaspoon Salt
    • 3 slice Ginger
    • 200ml Water
    • 1 teaspoon Light Soy Sauce (optional)
    How to do it:

    1. Mix pork with light soy sauce and cornflour.
    2. Bring water to boil.
    3. Add salt and wine.
    4. Cook the pork in the above quickly (as if cooking in steamboat).
    5. Stand pork in a pot of previously boil cool water.
    6. Drain and set aside.
    7. Take 2 tablespoon of the liquid from the pot used to cook the pork.
    8. Mix with sugar and plum.
    9. Serve pork with Frisee and plum sauce.
    Note:
    Add more sugar if you find your plum sauce too sour. Adjust according to your taste.

    Lettuce wrapped Chicken with Ginger Sauce


    I have plenty of chicken left from my Hainanese Chicken Rice. Eating another plate of rice will be too much for us, so we just ate the Chicken with Ginger Sauce wrapped with Lettuce.

    Anyone who has been to Soup Restaurant and tried their Samsui Chicken would be very familiar with this.



    Just put a piece of chicken on a lettuce. Top it with some Ginger Sauce and wrapped it up. Then send it to your mouth! Yummy!

    Ingredients:

    • Ginger
    • Sesame Seed Oil
    • Salt to taste

    How to do it:

    1. Blend ginger till very fine.
    2. Add salt to taste and sesame seed oil.
    3. Mix well.

      Yakitori

      Ingredients:
      • 2 Chicken Drumstick, deboned
      • Spring Onions, (white part) cut to sections
      Yakitori Sauce:
      • 4 tablespoon Sugar
      • 2 tablespoon Lemon Juice
      • 2 tablespoon Oil
      • 1 clove Garlic, minced
      • 3/4 cup Soy Sauce
      How to do it:
      1. Cut chicken to bite size pieces.
      2. Using a skewer, push 3 pieces of chicken and spring onions, alternating.
      3. Set aside.
      4. In a pot, mix all ingredients for Yakitori Sauce together.
      5. Boil until reduced to 2/3 of the original amount.
      6. Coat the chicken skewers with the sauce and broil them on a grill.
      7. Repeatedly coat the chicken skewers with sauce for 3 more times while cooking.
      8. Serve hot.
