Something's fishy - Salmon Croquettes

SALMON CROQUETTES
(makes 6)
2 wild salmon fillets (or a 15 oz. can)
2-3 tbsp baby dill, chopped
2 tsp lite mayo
1/2 tsp Dijon mustard (optional)
1 egg white
2-3 tbsp dry bread crumbs plus more for dredging
salt and pepper to taste
olive oil or cooking spray for frying

If you are using fillets, heat a pan and coat with spray. Place salmon skin side down and turn the heat to medium high. When you see the skin begin to peel remove pan from heat. Let cool and peel skin off.

Place salmon in a large bowl and mash with a fork. Add remaining ingredients and season to taste. Shape into patties, cover with film and refrigerate for 30 minutes.

Heat a skillet and coat with oil or spray. Dredge patties in crumbs lightly and place on pan. Cook on each side until golden brown. Serve with mustard or horseradish sauce.

Moist Chocolate Cake


What is Required
3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
6 tablespoons cocoa powder
2 cups water
2 cups sugar
1 tablespoon vanilla
2 tablespoons white vinegar
8 tablespoons (1/2 cup) oil
a handful of semisweet chocolate chips.

Instructions
Preheat the oven to 350F or 180C

How To Do
Sift the dry ingredients, flour, baking soda, salt and cocoa powder in a bowl.
Whisk sugar and wet ingredients, water, vanilla, vinegar and oil in another bowl.
Pour the batter into a parchment lined 9 x 13″pan and bake for 45 minutes at 180C
Cake is slightly moist in the middle when baked.

Grandma's Curry Chicken secret recipe

What is Required


1 chicken - cut into slices
2 big potatoes (peeled and boiled, cut into cube sizes)
3 tomatoes
2 garlic cloves - minced
2 shallots
1 big onion
1 cinammon stick
1 Star Anise
3 seeds of Cardamon
3 tbsp cooking oil
5 tbsp curry powder
50g coconut milk
1 cup fresh milk
3 tbsp sugar ( taste)
1 pinch of salt


How To Do it




Heat the wok with oil and fry the garlic, shallots.
Add in the Star Anise and the cinnamon stick
Fry until fragrant for 1 minute.
Add in the chicken slices and fry.
Pour in the curry powder, add 5 tbsp of water. and fry for another 2mins,
Add in the onion and the tomatoes and fry for 1 min.
Add in coconut milk and fresh millk.
Simmer until the chicken is cooked.
Add in the potatoes and simmer for about 2 mins.
Stir in the sugar and salt.
Ready to serve... hmm... smells good !

My undying love with Chilli Crab

What is Required
500g mud crabs - washed and cut
3 tbsp cooking oil
8 cloves garlic minced
2 fresh red chilli, chopped finely ( add more chilli if desire more spiciness)
1 tsp lemon juice (or lime or vinegar)
1 small bunch of lettuce
2 beaten eggs

Sauce Mixture
1.5 to 2 cup of water,
8 tbsp tomato ketchup
2 tbsp chilli ketchup (add more if desire more spiciness)
2 tsp cornflour
1 tsp pounded brown preserved soya beans ,
1 tsp salt
5 tbsp sugar (add more if desire sweeter taste)


If you are afraid to kill the crabs, no worries..I got these fresh crabs from Sheng Siong where they helped to kill and cut the crabs!
Look at those fabulous Crab roe ...


Heat a wok and add oil into the wok.
Add garlic and chilli and fry for 1 minute.
Add the crabs, except the shell head.
Fry the shell bodies for 2 mins, and add in the shell head.
Once the shells turns red, add in the sauce and cover with lid until the shells are all red.
Add the beaten eggs into the work and stir gently.
Add the lime juice.
Simmer till cooked.


Get a serving plate ready.
Add the lettuce to the base of the plate.
Scoop the crabs onto the serving plate.

Shrimp Dumpling Soup

Shrimp Dumpling Soup Recipe (aka Wantan Soup)

What is required
400g of wantan wrappers
1 litre of chicken stock
300g of shelled prawns
400g of minced pork
100g of water chestnut
100g of carrot
1 stalk of chopped spring onion
1 egg

Seasoning
3 tbsp light soy sauce
1 tsp salt
1 tbsp sugar
1 tsp pepper
2 tsp sesame oil
2 tsp corn flour

How to do it

1. Add the minced pork, prawns, water chestnut, carrot, spring onion
2 Mix in the Seasonings and the egg.








3. Add 1 tsp of mixture onto the wanton wrap
4. Dip finger in water and spread edge of the wantan to wet it , in order for it to be wrapped.









5. Repeat until all the wantons are wrapped.

6. Boil a pot of water and cook the wantons (about 5 to 8) each time for about 5mins . Remove and set aside on a plate.
7. Do this until all the wantons are cooked





8. Use the chicken stock and bring to a boil.
9. Put the same batch of wantons for around 2mins and serve each portion of about 5 onto each bowl.







Potato Leek Soup

Ingredients

  • 7 large potaotoes (leave peels on)
  • 3 to 4 leeks
  • 3 stalks celery
  • 1 large onion
  • 4 cloves of garlic
  • a little fresh basil (or dried ones)
  • 2 tablespoons corn oil
  • 1 or 2 bay leaf
  • a few sprigs fresh parsley, chopped or 1 teaspoon dried ones
  • light cream (optional)
  • 6 to 8 cups of water
  • salt and pepper to taste

    Oatmeal Cookies

    The Oatmeal Cookies are crispy which I like. You may substitute the currants with other dried fruit like raisins, dried sweetened cranberries, dried blueberries, etc. It has to be dried fruit as fresh or frozen fruit has too much liquid in them that will make the cookies soggy.

    This cookies are great for after school snack. What is better than cookies with milk.

    Ingredients

  • 2/3 cup quick oats or old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup unsalted butter, softened (1/2 stick)
  • 1/2 cup packed light brown sugar
  • 1 large egg white
  • 1/4 teaspoon vanilla extract
  • 1/4 cup currants

Instructions

  1. Preheat oven to 375F.
  2. In a small bowl, mix oats, flour, baking powder, baking soda and salt.
  3. In a medium bowl, cream butter and sugar with an electric mixer. Beat in egg white and vanilla until blended. Stir in currants.
  4. Add dry ingredients and mix just until blended.
  5. Drop heaping tablespoons of dough onto an ungreased cookie sheet, spacing them about 2 inches apart. Bake for 9 to 10 minutes, or until the edges of the cookie turns brown.
  6. Set cookies sheet on a wire rack to cool for 5 minutes. Transfer cookies to rack and cool completely. Store in airtight containers at room temperature up to 3 days.
  7. This recipe makes 12 cookies.
